The Phoenix Mountains in northern Guangdong are home to some of the world's rarest and most exclusive teas, with a history stretching back to the Song Dynasty. Here, on the varied slopes of Wudong Mountain, both young and centuries-old tea bushes and trees grow, having adapted over the years to the area's unique climate. In this changing environment, where sunny patches alternate with mist-shrouded slopes and rocky terraces, teas develop distinctive aroma and flavour profiles that reflect the region's diverse landscape.

The rich variety of cultivars in the area has led to a special classification method, where teas are sorted not only by cultivar, but also by flavour type and sometimes by the mother tree from which the leaves originate. This means that a certain fragrance type can be achieved with different cultivars, providing endless opportunities to explore different flavour dimensions. One such tea is Duck Shit Fenghuang Dancong, which has been treated with great care to bring out its elegant fruity and floral notes, combined with a soft honey sweetness and a long, aromatic aftertaste that lingers in the mouth and throat.

The tea farm where this tea is grown has a strong focus on sustainability. Farming is carried out without the use of pesticides or artificial fertilisers, ensuring a natural balance in the environment and a pure taste. This Duck Shit Fenghuang Dancong, harvested in spring 2024.

D uck Shit Fenghuang Dancong is well suited for multiple infusions. The second brew is best kept short, as the leaves have already started to open and release their flavours. Subsequent infusions, on the other hand, should be left to rest a little longer, so that the flavours deepen and the nuances emerge. For many teas, two or three infusions with the above parameters are enough, but some keep on giving, cup after cup.

The Gongfu method allows many short infusions. Increase the time gradually over time. Oolong teas and pu erh are particularly suitable.
