Matcha is an exclusive green tea made from tencha leaves - a specially selected tea leaf that, like Gyokuro, is grown under shade for some time before harvesting. This shading intensifies both the flavour and the nutritional content by raising the chlorophyll level in the leaves, giving matcha its deep green colour and characteristic umami-rich flavour. While many products on the market today are marketed as matcha, they often consist of ground sencha. Genuine matcha, like our Organic Matcha<\/em>, however, are always made from tencha leaves, which provide a completely different level of flavour and quality.<\/p>\n

Preparation of Usucha<\/h3>\n

Usucha is the classic matcha cup with a beautiful light green foam. The result is light, airy and refreshing.<\/p>\n

  • Dosage: Use about 2 g.<\/li>\n
  • Water volume: add 60-100 ml of water.<\/li>\n
  • Temperature: 70-80\u00b0C.<\/li>\n
  • Technique: Whisk vigorously with a bamboo whisk (chase<\/em>) in a \u201cW\u201d motion until a dense, fine foam forms on the surface.<\/li>\n<\/ul>\n
