Malgr\u00e9 son nom, qui signifie \u201dth\u00e9 blanc d'Anji\u201d, il est class\u00e9 dans la cat\u00e9gorie des th\u00e9s verts car les feuilles sont trait\u00e9es \u00e0 la chaleur pour stopper l'oxydation. Le th\u00e9 est fabriqu\u00e9 \u00e0 partir de jeunes feuilles claires d'un cultivar particulier \u00e0 faible teneur en chlorophylle, ce qui lui conf\u00e8re sa couleur p\u00e2le caract\u00e9ristique. La saveur est douce, sucr\u00e9e et fra\u00eeche, avec souvent des touches d'umami et des notes de primev\u00e8res printani\u00e8res.<br \/>\nOrigine : Anji, Zhejiang, Chine.
