En Cor\u00e9e, qui produit essentiellement du th\u00e9 vert (nok-cha), l'int\u00e9r\u00eat pour le Balyocha s'est accru et ce th\u00e9 est aujourd'hui produit \u00e0 la fois par de grands producteurs commerciaux et par de petites exploitations familiales. Nos th\u00e9s cor\u00e9ens proviennent directement d'une petite exploitation familiale situ\u00e9e \u00e0 Hwagae, Hadong, la plus ancienne r\u00e9gion de culture du th\u00e9 et celle qui produit toujours, et de loin, les meilleurs th\u00e9s.  Parmi les diff\u00e9rents th\u00e9s cor\u00e9ens que nous avons essay\u00e9s, nous avons trouv\u00e9 que les th\u00e9s de cette ferme familiale \u00e9taient d'une classe \u00e0 part. La famille Kim produit ses th\u00e9s selon des m\u00e9thodes traditionnelles, \u00e0 partir de ses propres th\u00e9iers semi-sauvages, cultiv\u00e9s sans pesticides ni engrais. Les feuilles de th\u00e9 sont cueillies et trait\u00e9es \u00e0 la main, et ce Balyocha est fabriqu\u00e9 \u00e0 partir de feuilles de th\u00e9 cueillies au cours de la deuxi\u00e8me semaine de mai, la r\u00e9colte connue en Cor\u00e9e sous le nom de jungjak. En Cor\u00e9e, la r\u00e9colte est divis\u00e9e en quatre p\u00e9riodes principales : ujeon, seejak, jungjak et daejak (daejak d\u00e9signe toutes les r\u00e9coltes qui ont lieu apr\u00e8s jungjak et comprend donc des qualit\u00e9s plus simples).<\/p>\n<p>Le Balyocha est oxyd\u00e9 \u00e0 environ 60-70 % et est fabriqu\u00e9 en soumettant les feuilles de th\u00e9 aux \u00e9tapes suivantes : un long processus de fl\u00e9trissage \u00e0 l'ombre, le roulage (qui est plus important que celui des th\u00e9s verts), un processus d'oxydation\/s\u00e9chage prolong\u00e9 qui peut durer 1 \u00e0 2 jours. Nous avons choisi d'inclure le Balyocha dans la cat\u00e9gorie des oolongs parce que ce th\u00e9 peut presque \u00eatre class\u00e9 comme un oolong dans le sens o\u00f9 il est partiellement oxyd\u00e9, mais dans la pratique, il n'entre pas dans les cat\u00e9gories de th\u00e9 existantes. En Cor\u00e9e, le terme Hwang-cha (th\u00e9 jaune) est parfois utilis\u00e9 pour d\u00e9signer les th\u00e9s obtenus selon cette m\u00e9thode. Balyocha, quant \u00e0 lui, signifie th\u00e9 oxyd\u00e9 et peut \u00e9galement faire r\u00e9f\u00e9rence \u00e0 d'autres th\u00e9s oxyd\u00e9s. Le balyocha s'oxyde et s\u00e8che \u00e0 une temp\u00e9rature comprise entre 30 et 40 degr\u00e9s, ce qui favorise l'apparition d'une flore bact\u00e9rienne naturelle sur les feuilles de th\u00e9, qui est saine pour l'homme. Dans l'ensemble, le Balyocha est un th\u00e9 au caract\u00e8re unique dont la saveur est douce et cors\u00e9e, avec des notes chaudes de chocolat, de bois pr\u00e9cieux et de miel. La ferme de th\u00e9 pratique une agriculture durable et n'utilise ni pesticides ni engrais artificiels.<\/p>\n<p>Origine : Hwagae, Hadong, Cor\u00e9e du Sud.
