Cet ombrage conf\u00e8re au th\u00e9 un profil aromatique particulier et lui permet d'\u00eatre class\u00e9 dans la cat\u00e9gorie des th\u00e9s sencha. <em>kabusecha<\/em>, qui signifie \u00ab sencha cultiv\u00e9 \u00e0 l&#039;ombre \u00bb en japonais. L&#039;ombrage avant la r\u00e9colte augmente la quantit\u00e9 de chlorophylle dans les feuilles, ce qui donne une couleur plus verte et une saveur plus riche et plus charg\u00e9e d&#039;umami.<br \/>\nCultiv\u00e9 dans la r\u00e9gion montagneuse de Kirishima, \u00e0 Kyushu, ce th\u00e9 est d'autant plus sp\u00e9cial qu'il est issu de la premi\u00e8re cueillette des feuilles au printemps, lorsque le th\u00e9 est le plus nutritif et le plus savoureux.
