Our Bai Hao Yin Zhen is a white tea from the area of origin of white tea, and is picked and produced entirely by hand. The tea consists of a very early harvest of the very finest buds. Authentic white tea is only produced in Northern Fujian Province, and Bai Hao Yin Zhen is only produced in the Zhenghe and Fuding areas, and should have been made from the dabaihao subspecies. As white tea is the least processed of all teas, terroir and picking have a proportionally greater impact on the finished tea. During production, the buds are laid out one by one on round bamboo trays and dried outdoors in the shade, under the careful supervision of the tea master. A final heating process is then carried out to ensure that the humidity level is sufficiently low. The silvery, downy buds give a clear infusion with fresh notes of melon, a light herbaceousness and a delicate nutty sweetness. The flavour is incredibly clear, round and smooth and the tea stands up to an exceptional number of brews.
