Cloud and Mist is a hand-picked green tea from the Wuling Mountains in Hunan Province, China. The Wuling Mountains are known for their beautiful, unspoilt nature and excellent environment for growing tea. There is a significant difference in temperature between night and day, humidity is high, and the mountains are often shrouded in clouds and mist. The delicate, deep green leaves are picked at high altitude in early spring and produce an infusion with a rich flavour of saturated, soft greenery. Cloud and Mist is well suited for multiple infusions. The second infusion is best kept short, as the leaves have already started to open up and release their flavours. Subsequent infusions, on the other hand, should be left to rest a little longer, so that the flavours deepen and the nuances emerge. For many teas, two or three infusions with the above parameters are enough, but some keep on giving, cup after cup.
