Traditional Tie Guanyin

Our Traditional Tie Guanyin is a stunning version of one of China's most beloved and famous oolong teas. Grown in the lush Anxi region, deep in Fujian province, the tea bushes are allowed to grow in a pristine and crystal clear environment at high altitude. These altitudes give the tea its unique character through cooler temperatures and natural mists, allowing the leaves to mature slowly and develop a deep flavour profile. The tea leaves are hand-picked with care, an endeavour carried out with great attention to detail and traditional craftsmanship.

In the manufacturing process, Traditional Tie Guanyin undergoes a careful and slow roasting process, where the tea leaves are roasted in several stages to bring out their full depth of flavour. This time-consuming method gives the tea its characteristic, full-bodied flavour and brings out both its round, buttery texture and fresh green undertones. In the cup, Traditional Tie Guanyin offers a mild butteriness, fresh greenness and a light note of lilac, a flavour profile that is both complex and balanced. The aftertaste is long, smooth and clear, making it a lingering experience.

The tea is grown without the use of pesticides or fertilisers, using natural methods that strengthen the health of the soil and the natural resilience of the tea bushes. .

T Traditional Tie Guanyin is well suited to multiple infusions. The second infusion should ideally be kept brief, as the leaves have already begun to unfurl and release their aromas.

Water temperature 90-95 °C

First rinse 5-10 sec (pouring away)

Infusion 1 10-15 sec

Infusion 2 5-10 sec

Infusion 3 10-15 sec

Infusion 4 15-20 sec

Infusion 5 20-30 sec

Infusion 6+ +10 sec per extra infusion

The Gongfu method allows for many short infusions. Gradually increase the steeping time as you go along. Oolong teas and pu-erh are particularly well suited to this method.
