Among yellow teas, Junshan Yinzhen occupies the most prestigious place. Perhaps this is due to the excellent and limited growing conditions on Junshan Island in Dongting Lake, Hunan Province, and the lengthy and skilful yellowing process. Perhaps it is also partly because Junshan Yinzhen is said to have been Mao's favourite tea. Hunan was also his home province. The high demand and limited supply of genuine Junshan Yinzhen has led to green versions being falsely marketed as the real thing.

Our Junshan Yinzhen is from Junshan Island and undergoes the traditional yellowing process. This process means that the not yet fully dried leaves undergo a longer rest and are roasted in many rounds. The tea leaves are easily oxidised during this time-consuming production stage and the flavour takes on a mature, sweet character without bitterness. As a result, true yellow Junshan Yinzhen can be stored better and the leaves can undergo a multitude of infusions without losing flavour and richness. The beautiful, feathery buds produce an infusion that has a clear, velvety flavour and hints of aromatic fruitiness, almost reminiscent of feijoa.

J Unshan Yinzhen Reserve is well suited to multiple infusions. The second infusion should ideally be kept brief, as the leaves have already begun to unfurl and release their aromas.
