This oolong tea from the majestic He Huan (合歡山) mountain in Taiwan is harvested at an impressive 2200 metres altitude. Surrounded by forest, the area has a unique environment where sunny mornings turn into mist-shrouded afternoons, while winter brings a blanket of snow over the landscape. These conditions, which alternate between light and moisture, create a particularly favourable environment for growing tea and contribute to its rich and complex flavours.

The tea leaves are carefully handpicked and gently processed by skilled tea masters who ensure that each step is carried out with precision to bring out the full flavour potential of each leaf. As a final step, the tea undergoes a light roasting, giving it a warm, caramelised note with hints of fruitiness that balance nicely with its natural freshness.

Harvested in spring 2022, this He Huan-oolong captures the essence of its unique growing location. Cultivator Qing-Xin contributes to the tea's distinctive character, bringing out a rich flavour profile refined through traditional preparation and generations of knowledge.

H ehuan Shan 2200 m Charcoal Roasted is well suited for multiple infusions. The second brew is best kept short, as the leaves have already started to open and release their flavours. Subsequent infusions, on the other hand, should be left to rest a little longer to allow the flavours to deepen and the nuances to emerge. For many teas, two or three infusions with the above parameters are enough, but some keep on giving, cup after cup.

The Gongfu method allows many short infusions. Increase the time gradually over time. Oolong teas and pu erh are particularly suitable.
